Chateau Pavie Decesse is a Saint-Emilion Grand Cru Classe that comprises a 3.65-hectare vineyard.
The vineyard
This Saint-Emilion wine is made from vines that are 36 years old on average and are planted on clay-limestone soil over asteroid limestone.
Vinification and aging
Adapted to the strict potential of the harvest, the vinification is carried out in temperature-controlled wooden vats. Malolactic fermentation is carried out in barrels, as is the aging process (80% new barrels and 20% second-fill barrels).
The blend
Chateau Pavie Decesse 2021 comprises a blend of Merlot (88%) and Cabernet Franc (12%).
