Description
The property
Chateau Pavie-Decesse is a Grand Cru Classe of the Saint-Emilion appellation whose vineyard covers an area of 3.65 hectares. Aged 52 years on average, the vines are planted on a terroir representative of the limestone plateau of Saint-Emilion, composed of clay-limestone soil over Asteria limestone.
Vinification and aging
Strictly adapted to the harvest, the vinification is carried out in temperature-controlled oak vats. Malolactic fermentation is carried out in barrels, as is aging (80% new barrels and 20% second-fill barrels).
The blend
The Chateau Pavie-Decesse 2020 is made from a blend of Merlot (88%) and Cabernet Franc (12%).
