Winemaking and ageing
Manual harvesting. Fermentation in temperature-controlled stainless steel and concrete vats. Vatting time of 2 to 3 weeks. Devatting after running off. Aged for 16 to 20 months.
The nose releases fruity (stone fruit) and subtly toasted fragrances.
A velvety attack gives way to an ample and persistent palate. The tannins and the tannic structure are of a great finesse. During the tasting, the palate becomes more complex in unveiling refreshing fruity (fruit of the forest, blueberry) aromas.
