The Champagne Comtes de Champagne Blanc de Blancs 2007 from Taittinger was born from an exceptional vintage. The climatic conditions during the year made it possible to harvest the grapes at the end of August with the grapes showing a good ripeness that foreshadowed that the best was yet to come, a superb aromatic potential and great freshness.
A quintessential expression of the greatest Blancs de Blancs, the Cuvee Comtes de Champagne Blanc de Blancs 2007 from Taittinger is an ode to Chardonnay, a variety identified with the Taittinger house. Rare and unique, the Cuvee Comtes de Champagne Blanc de Blancs 2007 comes from a selection of the 5 largest terroirs of the Cote des Blancs classified as "Grand Cru" (Avize, Chouilly, Cramant, Mesnil-sur-Oger and Oger). As an expression of purity and finesse, this Cuvee is made with only first-pressed wine. It is only after a slow maturation, from 8 to 10 years, in the cool, dark historical chalk cellars of the House located in Reims that the precious bottles of the Cuvee Comtes de Champagne Blanc de Blancs 2007 from Taittinger start to unveil themselves.
The Cuvee Comtes de Champagne Blanc de Blancs 2007 seduces at first glance with an elegant gold color and green reflections that is enhanced by the fineness and the persistence of the bubbles. The pure expression of the fruit radiates generous white-fleshed fruit and citrus aromas, delicate floral notes, and a saline minerality along with subtle smoky notes, all of which underscore refinement and complexity. On the palate, the mouth is seduced with a vivacious attack that unfolds with tasty lemon notes in a perfect balance between tension and acidity. The development continues with a lovely density that is greedy and ample, but it does not overwhelm the palate. The mineral freshness that accompanies the entire tasting stretches to the very end with a superb finish, a subtle combination of acidity and roundness with notes reminiscent of the richness of salted butter.
