    Mineral and complex, an exceptional champagne by Salon

    The estate

    Founded in 1920 and managed by Mr Aimé Salon, the family-owned Salon Champagne House is now part of the Laurent-Perrier group. Today, Salon continues to share its ambitions and resources with its neighbouring house, Delamotte. They are headed by Mr Didier Depond, along with the talented cellar master, Michel Fauconnet. Salon stands out by creating a unique cuvée, exclusively made from Chardonnay, from a single Champagne terroir (Cotes des Blancs), a single cru (Le Mesnil-sur-Oger) and a single great year.

    The wine

    Only produced during the finest years, Salon is an exceptional champagne, and each new vintage is an eagerly awaited launch.

    The vintage

    The cold winter with its frosts was offset by a milder month of March. April was marked by further frosts and heavy and persistent rainfall leading until July. This high level of humidity had an impact on the flowering period and vegetative development before a scorching start to August. The harvest began on September17th and produced high quality grapes which, despite these difficult conditions, revealed a pleasant acidity and exceptional potential.

    The blend

    Salon 2012 is a 100% Chardonnay.

    The tasting


    The color is a beautiful light gold with subtle greenish hues.


    Mineral, the nose mixes chalky notes with fruity and dried rose fragrances.


    The palate is seduced by this champagne’s length, its freshness and its bold acidity. Throughout the tasting experience, pineapple and lychee aromas are combined with smooth smoky notes.

    Food and wine pairing

    The purity and minerality of this 2012 Salon will pair with a variety of refined dishes. Scampi tartar, scallops marinated in kombu, Daurenki imperial caviar, roasted turbot with miso or a filet of milk-fed veal from Corrèze served with white asparagus and morel mushrooms are delicious suggestions.


    For an optimal tasting experience, serve between 13 and 15°C.


    This Salon 2012 can be kept in the cellar until at least 2036 in order to reveal its full range of aromas.
