100% Pinot Noir, this Blanc de Noir from Drappier is a perfect expression of what Pinot Noir from the Aube can become. Drappier uses only the juices from the first pressing, uses mechanical low-pressure presses and the use of gravity to avoid pumping. His gentle style allows him to avoid oxidation and maintain the freshness and minerality in the fruit. Alcoholic fermentation lasts roughly 2 weeks at low temperatures followed by a natural malolactic fermentation. 100% of the wines are made in vats in order to preserve as much freshness as possible. Drappier believes in minimal use of sulfur. After bottling, the cuvee is aged at least 30 months on the lees. Zero dosage.
Drappier’s Brut Nature is fresh and linear in style. Notes of freshly pressed black grapes, of red, white and citrus fruits. Ample palate with flesh of vineyard peach and bouquet of aromatic herbs. Subtle spice notes on the finish. A fine, tightly knit Champagne of great purity.
