Medium salmon pink, delicate pinkish glints, silver touch, persistent, creamy mousse. A crisp biscuity tone underpins red fruit nuances such as sweetheart cherries, pineberries, white flowers, orange zest, and a sprig of fresh mint. On the palate, vibrant freshness is embraced with dark forest berries, but also cranberries mingled with herbs such as thyme and rosemary, as well as a slight honey-nuanced core. The wine offers an ethereal quality, accentuated by soft toasted aromas on the finish, resulting in great length, and mineral reverberations. An accessible, multifaceted food companion with ageing potential.

The estate

The Dom Pérignon Champagne owes its name to the famous monk and procurator of the Abbey of Hautvillers in 1668, Pierre Pérignon, known as Dom Pérignon. According to legend, Pierre Pérignon discovered what is now known as the Champagne method. Dom Pérignon is a luminous Champagne house that draws inspiration directly from the philosophy of its founder, which lies in the pursuit of the ultimate perfection of Champagne wine.

The vineyard

Dom Pérignon cultivates vines composed of the two main grape varieties of Champagne, namely chardonnay and pinot noir. Its champagnes are renowned for being born on absolutely exceptional terroirs.

The wine

When Dom Pérignon Champagne becomes rosé, it is in the name of audacity: the audacity to break free from the conventions of Champagne making, to constantly push the boundaries of creation.

Born from this desire to dare, Dom Pérignon Rosé captures the red of pinot noir in its original brilliance and captures its complexity in a bold and assumed blend. Crafted over nearly twelve years of slow and controlled transformation in the cellar, Dom Pérignon Rosé reveals itself to be intense and spontaneous, clear and dark, magnetic.

The vintage

A gray and veiled sky dominates the 2008 wine year, so unique in a solar decade with insolent generosity. Spring and summer are marked by the same lack of light and temperatures. It is September that, late and miraculously, makes the vintage. Just as the harvest begins (on September 15), the conditions are finally perfect: full sun and sustained north/northeast winds. To take advantage of such a turnaround, the picking is very spread out. The maturity of this vintage champagne 2008 reveals itself beyond all expectations in an unprecedented balance, high perched. The sanitary condition is impeccable.

Tasting

Nose
The bouquet opens instantly on raspberry and wild strawberry. Powdery notes of iris and violet quickly mingle with the fruit and settle in. On breathing, we finally see hints of greener nuances, closer to privet, angelica and camphor leaf.

Palate
The first sensations are tactile, fleshy, silky. They unfold gradually and then become firmer. The acidic framework, signature of the vintage, wraps itself in the structure of the pinot to reveal the heart of the wine. The finish asserts itself and persists in a scent of peony and white pepper.
