Description

Tasting Notes and Serving Suggestions for the Chablis Grand Cru Vaudésir 2022 from William Fèvre

Tasting

Color
The wine reveals a bright yellow hue.

Nose
The bouquet is fresh and refined, unfolding delicate aromas of white flowers and white-fleshed fruit. Citrus notes blend harmoniously with orchard-fruit aromas, while a distinctive mineral signature evokes oyster shell and iodine sea spray.

Palate
On the palate, this Grand Cru charms with its subtlety and remarkable balance. The attack elegantly combines vibrancy and suppleness, offering an airy, round and inviting texture. The fleshy structure reveals a fine mineral tension typical of the Kimmeridgian terroir, extended by a saline, lingering finish that refreshes the palate.

Food and wine pairings

This Chablis Grand Cru Vaudésir 2022 is an ideal match for oysters, grilled seafood, fish in a light sauce or grilled, as well as sushi. Its iodine notes make it the perfect companion for seafood.

Serving and cellaring

This Chablis Grand Cru Vaudésir 2022 can be enjoyed now or cellared until around 2028. It is recommended to serve it at a temperature between 10 and 12°C.

A Chablis Grand Cru true to the minerality and elegance of the Vaudésir terroir

The estate

Founded in 1959 by William Fèvre, the Domaine William Fèvre is a benchmark name in the Chablis vineyard. Recently acquired by the Domaines Barons de Rothschild Lafite in 2024, this Burgundian estate spans around 70 hectares across 90 plots, including Grands Crus and Premiers Crus parcels. Under the leadership of Didier Séguier since 1998, it stands out as one of the largest owners of Chablis Grands Crus. An environmental pioneer, it was the first Chablis estate to be certified HVE3 in 2014, and has been farming its Grands and Premiers Crus biodynamically since 2010.

The vineyard

Ideally located between Valmur and Les Preuses, the Vaudésir climat benefits from a prime exposure on steep slopes. The Kimmeridgian soils, composed of marl and marly limestone, offer Chardonnay a uniquely expressive terroir, giving the wine the characteristic minerality and freshness of Chablis. The 1.20 ha plot represents 8% of the total appellation.

The vintage

The 2022 vintage in Burgundy began with a mild, dry winter, followed by budbreak at the end of March and flowering at the end of May. Harvest started on August 31, making it possible to pick grapes in perfect health. The berries had thick skins and generous pulp, delivering an excellent juice yield.

Vinification and aging

The vinification of the Chablis Grand Cru Vaudésir 2022 favors gravity flow to avoid pumping. The grapes are pressed pneumatically over a short period of 1h30 to 2h00. Fermentation takes place in stainless steel tanks. Total aging lasts 19 months: 35% of the cuvée is aged for 5 to 6 months on fine lees in French oak barrels, while the aging is completed in small stainless steel tanks for the entire wine.

Grape variety

100% Chardonnay.
