A Fresh Sancerre with Notes of White Flowers and Citrus

The history of the Bailly family in the Sancerre appellation of France's Loire Valley of dates back to 1700. Following the damages caused by phylloxera in the late 19th century and the two World Wars that followed, Sylvain Bailly began to recover and grow Domaine Sylvain Bailly in the early 1950's. In the early 1980's, his son Jacques took over. Th estate currently covers 12 hectares spread over 23 separate parcels of vines. The terroir is composed of 60% chalky soils and 40% clay-based soils, enabling the family to plant red grapes in the clay soils and Sauvignon Blanc in both clay and chalky parcels. The white grapes of the estate are vinified in separate lots, based on the vineyard site of origin. Around 12 separate vats are used to ferment fruit from 23 vineyard parcels. The Sancerre Terroirs 2017 by Domaine Sylvain Bailly is produced from Sauvignon Blanc sourced from a terroir formed during the Jurassic period. The soil here is 70% shallow Oxfordian limestone and 30% of limestone-clay (known as ‘terres blanches’ or ‘white earth’). The vines are aged 18 years on average and are planted at a density of 6,500 to 7,000 vines per hectare. After a slow and gentle pressing, the juice is cold-settled and alcoholic fermentation takes place in thermoregulated tanks for 15 to 30 days. The wines mature on their lees and are then racked and filtered with Kieselgur.

The Sancerre Terroirs 2017 by Domaine Sylvain Bailly presents in the glass a brilliant pale yellow color, a hallmark of the Sauvignon Blanc varietal. The aromatic bouquet is very complex, exuding fragrances of white flowers, citrus fruit and menthol. In the mouth, this wine offers an elegant attack, followed by a beautiful freshness on the palate. Delicate notes of flowers and a minerality characterize the finish.
