The structure and aromatic complexity of a Chablis Premier Cru by Domaine Laroche
The estate
An essential reference in Chablis, Burgundy, Domaine Laroche is renowned for its unique historical heritage dating back to the 9th century. Domaine Laroche has been part of the Advini group since 2009 and is recognised for the precision, elegance and aromatic richness of its wines, which authentically express the subtlety of the Chablis climats.
The vineyard
A hallmark among fine Chablis wines and comprising a surface area of 90 hectares, the vineyard of Domaine Laroche, managed using agro-ecological viticultural practices, is composed exclusively of Premiers Crus and Grands Crus.
The wine
The 2018 Chablis 1er Cru "Les Vaillons Vieilles Vignes" by Domaine Laroche comes from a vineyard of 2.17 hectares. These old vines are 40 years old on average and benefit from deep roots, favoured by a soil of clay-limestone marl and sedimentary shells, as well as a south-east exposure which favours the perfect maturation of the vines.
The vintage
The mildness of the autumn and winter favoured the rapid development of the vines. The summer, marked by dry conditions and high temperatures, allowed the grapes to change colour 8 days earlier than the previous year.
Vinification and ageing
The hand-picked grapes are rigorously sorted upon arrival at the winery. After pressing, the must rests for 12 hours in large vats to accelerate natural sedimentation before fermentation. After blending, the wine is aged on fine lees for approximately 9 months in 1 to 7-year-old French oak barrels of 227 litres, 400 litres and 600 litres and in stainless steel tanks.
