Domaine des Caves du Prieure is a small, high-quality estate located in the village of Crézancy, just 7 km from the historic hilltop town of Sancerre. This family-run domaine is known for producing classic, terroir-driven expressions of Sauvignon Blanc that highlight the purity and precision of the region.
The vineyard
The vineyards of Domaine des Caves du Prieuré are planted on limestone-rich soils, typical of the Sancerre appellation. This terroir contributes to the wine’s vibrant minerality and structure, distinguishing it from wines grown on marl, which tend to be softer and fruitier. Sancerre spans 15 villages, but Crézancy is particularly prized for its elegant, aromatic style.
Vinification and aging
Grapes are gently pressed and undergo an 8-hour skin contact maceration to enhance fruit expression. Fermentation takes place in temperature-controlled tanks at 48°F (9°C), preserving the wine’s aromatic freshness. No oak is used, allowing the varietal purity of Sauvignon Blanc to shine through.
