Decanter

Dark berry fruit aromas. Ripe and grippy, this takes hold straight away with upfront tannins making their mark, covering the mouth in a fine layer of chalkiness but with a cool, wet stone element too. So mineral, very transparent in terms of terroir expression. Lithe and focused, there’s tension as well as. You can feel the muscles of the Cabernet but there’s a slightly chew and juiciness behind the tannin wall. Very precise, with meticulous detail to the tannins, fruit, and cooling acidity. Sophisticated and very enjoyable, if more tense at this point than some others. Blueberry and plum and fresh mint. There’s a real delicacy, pixelated aspect to the overall expression – grand and majestic. Harvest started on 8 September. 3.72pH.

Restrained power, elegant fine grained tannins, gentle extraction at 26C, rosebuds evident. This has clear Pauillac character, coupled with the finesse and drinkability of the vintage. Again the anis and slate that I have seen in a number of the best wines this year. Very impressive. 70% new oak. 3.72 pH, 24hl/ha, 2nd year in a row with such low yields.

The finesse of the bouquet says a great deal about the ambitions of Pierre Montégut and his team! They are clearly focused on grandeur, detail and subtlety. Floral notes lead the way, revealing hints of blackcurrant and red berries, before a final touch of graphite and iris emerges. On the palate, Pichon Baron steps quietly into the spotlight. It settles in calmly and waits! This allows it to distribute its vigor and breadth with precision, to reinforce the mid-palate and to sharpen the finish. The aim is to take its tannins to new heights: they release their power and reach full breadth at the end of the palate, where they are most relevant and imposing, while also providing—together with the acidity—the essential foundation of the whole structure. The power of Pichon Baron is remarkably refined, with a spectacular ability to calibrate its energy and to highlight the subtle, incisive character of its acidity. That acidity quite literally energizes the finish, like an athlete who finds an extra burst of speed in the final straight to cross the line without faltering. What momentum, what quiet strength, what a great wine! It still has many stories to tell, but what it already suggests today is dazzling!

Deep, intense red color with purplish highlights. An intense, fine, fruity nose—complex, delicate and profound—growing richer with a swirl of the glass. Utterly precise on the attack, especially flavorful on the mid-palate, complex and unmistakably Pauillac, this refined (with a new floral touch) and noble, very dense wine moves forward, tightening and then slowly unfurling. It develops with length, complexity and depth into a great, sappy, multifaceted finish with lingering persistence. Wow! Blend: 84% Cabernet Sauvignon, 16% Merlot. Alcohol: 13.3% – pH: 3.72. Yield: 24 hl/ha. Aging: 70% in new barrels and 30% in barrels used for one wine. Merlot harvest: September 8 to 17 – Cabernet Franc: September 17 to 20 – Cabernet Sauvignon: September 18 to 24.

Tasting

Nose
The bouquet reveals great complexity and is wonderfully aromatic. It exudes intense aromas of black fruits, such as blackcurrant and black cherry, intertwined with spicy notes, liquorice and floral hints. More roasted touches of cocoa and espresso, along with subtle nuances of cigar and mint, perfectly complete this olfactory expression.

Palate
The attack offers a lovely vitality and remarkable energy, carried by a vibrant purity of fruit. This wine masterfully combines the estate's characteristic power with a sovereign elegance. The structure relies on fine, silky tannins, balanced by a chalky freshness. The finish, vibrant and of exceptional length, unfolds multiple layers of fruit.

Food and wine pairing
This great wine will sublimate red and white meats, whether roasted, grilled or braised, such as beef, lamb, pork, veal as well as duck and game. It also pairs wonderfully with poultry, mushroom dishes, pasta in cream sauces, and rich fish such as salmon or tuna, not to mention dishes with Asian influences.

Serving and ageing
To fully appreciate this 2025 vintage, it is advisable to decant it between 3 and 6 hours before tasting and to serve it at a temperature of around 15.5°C in order to preserve all its brilliance. Endowed with exceptional ageing potential, it will evolve in the cellar for more than forty years and will be at its best until around 2070.

The excellence of a great Pauillac cru

The estate
Founded in 1694 in Pauillac, Château Pichon Baron has been a Second Grand Cru Classé since 1855. Today managed by AXA Millésimes, the estate has experienced a qualitative renaissance since its acquisition in 1987. This wine from the left bank of Bordeaux, made from a classic blend of Cabernet Sauvignon and Merlot, is renowned for its elegance and exceptional ageing capacity.

The vineyard
The estate's exceptional terroir extends over 75 hectares in the southern part of the Pauillac appellation, directly opposite the famous Château Latour. The vines, with an average age of 35 years, flourish on very high-quality gravel soils, low in nutrients and well-drained. The vineyard is divided into plots meticulously maintained according to their specific characteristics. The grand vin is, moreover, exclusively produced from the oldest vines planted on the "Butte de Pichon Baron", the historical and qualitative heart of the property.

The vintage
The year began with a mild and dry winter, leading to an early budbreak without any frost episodes. The spring, wetter and milder, favoured a rapid and even flowering at the end of May, despite significant mildew pressure. Summer set in early with hot and dry conditions, punctuated at the end of July by a cooler and rainier period that revived the vines before veraison on 30 July. A new heatwave in mid-August accelerated ripening. The beneficial rains of early September completed the ripening process before a very early, short and intense harvest, spread over 16 days, yielding low volumes but remarkable concentration.

Vinification and ageing
To craft this wine, an extremely rigorous sorting process was carried out, including manual selection, sorting at the cellar and optical sorting, discarding 3 to 5% of the harvest. The vinification methods favour gentleness: gravity-fed vatting, yeast bioprotection, indigenous yeast starter and low fermentation temperatures. Extraction is measured, accompanied by gentle pump-overs and rack-and-returns. Malolactic fermentation takes place in vats. Ageing extends over 18 months, with a proportion of 70% new French oak barrels and 30% one-wine barrels. Alcohol content: 13.3% vol.

Grape varieties
This blend is composed of 84% Cabernet Sauvignon and 16% Merlot.
