Description
Tasting Characteristics and Notes for Château d'Yquem 1958
Tasting
Appearance
The colour reveals a hue ranging from deep gold to amber, and can even take on a coppery tone depending on the bottle's level of evolution.
Nose
The nose, resolutely oriented towards tertiary aromas, exudes scents of dried fruit such as fig, date and apricot, mingled with notes of candied orange peel. These are joined by rich hints of dark honey, caramel, praline and sweet spices such as saffron and cinnamon, rounded off by subtle touches of beeswax and undergrowth.
Palate
On the palate, this wine offers a smooth, silky texture. The sweetness, while present, is harmoniously balanced by a lovely acidity that preserves its freshness. The remarkably long finish lingers on notes of candied fruit, honey and spices, enhanced by a noble, delicate bitterness reminiscent of citrus peel.
Food and Wine Pairings
Ideal with pan-seared foie gras or blue-veined cheeses such as Roquefort, this wine also pairs wonderfully with desserts featuring dried fruit or citrus. For more gastronomic pairings, it will beautifully enhance roast poultry with morels or lightly spiced Asian dishes.
Serving and Cellaring
To fully appreciate this Château d'Yquem 1958, it is recommended to serve it at a temperature between 12 and 14°C. Vigorous decanting is not advised; a gentle aeration in the glass or a delicate pour just before serving is preferable. This mature vintage should be enjoyed now, as its ageing potential depends entirely on its past storage conditions.
The Tertiary Elegance and Complexity of a Sweet Sauternes Wine
The Estate
Located in the Bordeaux region, this historic estate, officially established as a full property in 1711, is renowned the world over. Château d'Yquem, the sole Premier Cru Supérieur classified in 1855, spans a vineyard of around a hundred hectares. Acquired by the LVMH group in 1999 and now led by Pierre Lurton, the estate continues a tradition of excellence. It stands out for its rigorous viticultural practices and mastery of noble rot, giving rise to wines of extraordinary longevity.
The Vineyard
The vineyard sits atop the highest ridges of the Sauternes appellation. Resting on a mosaic of soils made up of alluvial terraces and clay-limestone outcrops, the vines benefit from optimal natural drainage. This terroir enjoys a unique microclimate, born from the meeting of the Ciron and Garonne rivers, fostering the morning mists essential to the development of the Botrytis cinerea fungus. The estate, deeply committed to environmental responsibility through organic conversion and biodynamic practices, also preserves rich biodiversity across its meadows and woodlands.
Winemaking and Ageing
The making of Château d'Yquem 1958 relies on entirely hand-picked harvests, carried out through successive selective passes to gather only the berries perfectly affected by noble rot. After gentle pressing, fermentation and ageing take place in oak barrels, allowing the wine to develop its structure, aromatic richness and characteristic balance before bottling.
Grape Varieties
Sémillon, Sauvignon Blanc.
