Description
An aromatic and structured Grand Cru from Saint-Emilion
The property
Chateau Bellevue Mondotte is a Grand Cru of the Saint-Emilion appellation, whose 2 hectare vineyard is partly enclosed within Chateau Pavie Decesse. Located on the clay-limestone plateau of Saint-Emilion, at an altitude of 80 meters above the Dordogne valley, this terroir, whose vines are 51 years old on average, enjoys an ideal southern exposure, sloping soils favoring excellent natural drainage and a vineyard that is not subject to frost due to its geographical location.
Vinification and aging
Harvested manually, the grapes undergo rigorous sorting before being vinified. Alcoholic fermentation takes place in thermoregulated wooden vats. Malolactic fermentation is carried out in barrels, as is aging (90% new barrels and 10% second-fill barrels) with a final blend just before bottling.
