Tasting

Color
White in color, this wine reveals a pale lemon hue with subtle golden nuances, reflecting its lovely freshness and delicate extraction.

Nose
The aromatic bouquet opens with floral notes of hawthorn and acacia, mingled with vibrant citrus fruits such as lemon and lime. Touches of white-fleshed fruit, flint and subtle iodine nuances reminiscent of shellfish round out this mineral expression.

Palate
Deep and complex, the palate offers a succulent texture balanced by a racy acidity. Flavors of citrus, white peach and apricot intertwine with a pronounced mineral and saline backbone. The finish is long, persistent and delicately iodine-tinged.

Food and wine pairing

This white wine pairs perfectly with seafood, particularly fresh oysters, scallops or mussels marinière. It also goes wonderfully with poached white fish, light citrus-infused poultry dishes, as well as creamy cheeses such as Époisses or aged hard cheeses like Comté. For a regional pairing, traditional gougères or parsleyed ham will be perfect.

Service and storage

Approachable in its youth, this Chablis Village "Domaine" 2023 also boasts a fine structure allowing it to evolve favorably in the cellar and be enjoyed until around the mid-2030s.

The estate

Founded in 1959 from seven hectares of family-owned vines, Domaine William Fèvre is a key reference in Burgundy. Located at the heart of the appellation, the estate now spans 78 hectares of vineyards, including the largest area of Grands Crus in the region. A pioneer in environmental practices, the estate is run by Didier Séguier and has belonged to Domaines Barons de Rothschild since 2024. It stands out for its meticulous viticulture and its commitment to conveying the mineral purity of its terroirs with great precision.

The vineyard

The vines dedicated to this Chablis thrive on the famous Kimmeridgian soils, formed 150 million years ago. This unique terroir consists of an alternation of limestone and marl rich in marine fossils, giving the grapes their distinctive mineral signature. The vineyard is cultivated according to organic principles, without herbicides, and the grapes are harvested entirely by hand to select the berries at their optimal ripeness.

The vintage

The year 2023 was marked by a particularly warm and sunny growing season in France. Despite some risk of spring frost, which ultimately did not affect the cycle, summer weather conditions favored optimal development. The heat allowed the berries to achieve richness and excellent phenolic maturity, while preserving the tension and freshness necessary for balanced fruit.

Winemaking and aging

The grapes for the Chablis Village "Domaine" 2023 are transported to a gravity-fed winery to preserve the integrity of the fruit. Each plot is vinified separately to respect the expression of its microclimate. For this cuvée, aging takes place almost exclusively in stainless steel tanks for 10 to 12 months on fine lees. This method, which excludes the use of oak barrels, helps preserve all the wine's liveliness and mineral definition.
