The harvest of the whites from chateau Margaux plots took place from September 3rd to September 8th. The summery weather allowed to harvest the Sauvignon grapes when they were perfectly ripe and concentrated, whereas the relative coolness of August enabled the grapes to retain all the acidity necessary for the balance of the wine and its ageing ability. The 2015 Pavillon Blanc is in line with the wines that chateau Margaux have been producing since 2011; they are just as concentrated but less rich in alcohol. Harvesting a little earlier and severity of selection has enabled Margaux to obtain such a result. The nose of the Pavillon Blanc 2015 is very aromatic and very complex, it is round on the palate and the finish is carried by the acidity. It is one of the great vintages of Pavillon Blanc.
The 2015 Pavillon Blanc de Château Margaux was cropped at 20 hl/ha and represents just one-third of the production, equivalent to around 10,000 bottles. It has a fresh lime cordial, apple blossom and white peach scented bouquet that is very seductive. The palate is well balanced with a keen thread of acidity, engendered by the cool nights in August and September. It is very harmonious with almond and a touch of stem ginger and sour lemon towards the finish, an accomplished Pavillon Blanc that should offer 10-15 years of pleasure.
