A fruity, structured, and dense Pessac-Léognan
The property
Owned by the Bernard family since 1983, the magnificent Domaine de Chevalier is at the top of the greatest Classified Growths of Bordeaux. The estate is located in the heart of the Pessac-Léognan appellation, nestled in a green setting south of Bordeaux. L'Esprit de Chevalier is the second wine of the estate.
The vineyard
Domaine de Chevalier is a Pessac-Léognan wine from a rare 67-hectare vineyard, resting on a gravelly terroir with clay-gravel subsoils. Since 1986, the young vines have been destined to ripen the berries that contribute to the blend of the estate's second wine, L'Esprit de Chevalier.
Vinification and aging
After manual harvesting in crates, during which meticulous sorting in the vineyard is carried out, the berries are sorted again in the winery before and after destemming. The grapes are vinified in four vats: one in steel, one in steel-aluminum, one in truncated concrete, and one in a wooden vat. Then, the wine ages in barrels of the grand vin, a third of which are new, for 14 months with stirring on lees for the first 4 months.
Blend
Cabernet sauvignon (65%), merlot (35%).
