A pleasantly fresh white wine from Chablis Premier Cru
The Chablis Premier Cru "Les Vaillons” from Domaine Billaud-Simon comes from a plot of 2.95 hectares located in the appellation of Chablis. The name of this wine comes from the term "valley,” in reference to the location of the plot. The vines of Chardonnay are planted on a terroir of stony clay-limestone colluvium soils on a base of Kimmeridgian soil. The aging of the wine is carried out over a period of 14 to 16 months in stainless steel vats, and they are then sometimes transferred to French oak barrels. The product is racked twice before being bottled at the end of the fall.
At the tasting, the Chablis Premier Cru "Les Vaillons" 2015 of Domaine Billaud-Simon offers a brilliant color with gold highlights. Rich on the nose, it develops ripe citrus and white flowers fragrances. The wine offers a lively attack and a charming texture in the mouth. It also has an exceptional length and an aromatic persistence of great purity, combining fruity and citrusy touches. This Chablis wine leaves a wonderfully fresh impression on the palate.
