Tasting
Appearance
The wine displays a deep ruby-red color with garnet highlights at the rim of the glass.
Nose
The nose opens on a complex, evolving bouquet dominated by red fruits, notably strawberry and raspberry. These fruity aromas intertwine with notes of sweet spices, white pepper, and garrigue. With aeration, hints of orange peel, cedar, and subtle touches of cocoa emerge.
Palate
On the palate, the wine offers a rounded attack and an elegant medium- to full-bodied presence. The tannic structure stands out for its softness and suppleness, with a slightly grainy texture reflecting excellent phenolic ripeness. The palate unfolds with depth, revealing flavors of dark berries—particularly blackcurrant—adding to the initial strawberry notes. Mineral nuances progressively assert themselves toward the finish. The balance between fruit, acidity, and tannins is remarkable, with acidity bringing freshness and vibrancy throughout the tasting. The finish lingers with fine persistence and a distinctive saline quality that reflects the diversity of the blended terroirs.
Food and Wine Pairing
This wine pairs perfectly with game dishes such as wild boar, venison, or hare. It also brilliantly complements a slow-simmered game stew, noble mushrooms such as porcini, as well as aged cheeses and charcuterie. Roasted or braised meats—whether beef, lamb, or poultry—also make excellent pairings, particularly when prepared with herbs such as thyme or lavender. Mediterranean dishes featuring olives, caramelized root vegetables, and tapenade also find a lovely harmony with this wine. Lightly spiced dishes, such as Moroccan lamb and apricot tagines, can create remarkable matches.

A Complex and Elegant Châteauneuf-du-Pape by Xavier Vignon
The Estate
Xavier Vignon established himself in the Rhône Valley in 1996 after traveling through the world’s great winegrowing regions. A consulting oenologist, he simultaneously developed his own activity as a négociant-winemaker. His philosophy is rooted in the art of blending, a discipline he considers the cornerstone of creating a wine. A recognized innovator, Xavier Vignon notably developed the Vinarium system, a revolutionary aging technique. Around 70% of his production is certified organic by Ecocert, reflecting his commitment to viticulture that respects terroirs.
The Vineyard
Cuvée Anonyme 2021 comes from collection vines located across all the great terroirs of Châteauneuf-du-Pape. These plots, planted according to the appellation’s historic poly-varietal tradition, bring together several grape varieties within the same parcel. The wine is a true geological anthology of the region, incorporating grapes from all major soil types: La Crau and its characteristic rolled pebbles, red gravelly soils, sandy deposits, safres, and Urgonian limestone formations. Extremely low yields require around three vine stocks to produce a single bottle.
The Vintage
The 2021 vintage was marked by a harsh winter with a severe frost episode affecting vineyards across France. A milder spring encouraged flowering at the end of May, followed by particularly rainy months of June and July. Weather instability was observed between mid-July and mid-August. Despite these challenging conditions, the harvest yielded grapes retaining freshness and refined tannins.
Winemaking and Aging
The 2021 Cuvée Anonyme harvest was carried out by hand with partial destemming of whole clusters, with the degree varying according to grape varieties and their ripeness. Fermentation took place at low temperature, maintained between 22 and 24°C, in order to preserve aromatic freshness and the delicacy of the vintage’s characteristic tannins. Aging lasted eighteen months, divided into three equal parts: one third in concrete vats, one third in truncated-cone foudres, and one third in 228-liter demi-muids. The barrels used were not new, allowing subtle integration of oak notes without dominating the wine’s expression.
