Bin 389 Cabernet Shiraz 2014 from Penfolds : an Australian red wine with ripe and perfectly integrated tannins
The Bin 389 Cabernet Shiraz of Penfolds is a red wine produced in Australia on vineyards from various appellations (Barossa Valley, Wrattonbully, McLaren Vale, Coonawara). The wine is aged for 12 months in American hogsheads oak casks, 53% in new barrels, 27% in barrels of one previous wine and 20% in barrels of two previous wines. The Penfolds Bin 389 Cabernet Shiraz 2014 blends 53% Cabernet Sauvignon and 47% Shiraz.
At tasting, the Penfolds Bin 389 Cabernet Shiraz 2014 displays a bright crimson red color. The nose develops aromas of baker's yeast, crispy duck skin and cooking juices. It then releases fruity fragrances (rhubarb, quince, figs) followed by sesame oil and pine cone. Graphite and empyreumatic notes can then also be observed. On the palate, the wine reveals complex flavors of red currants, eggplant and black olives. Medium-bodied, it offers ripe and perfectly integrated tannins. The Penfolds Bin 389 Cabernet Shiraz 2014 reveals tasty touches of iron loaded meat, whetstone and olive oil, before blackberry cream and blueberries finally appear.
