Audacia Wines : Cabernet Sauvignon 2011

At Audacia winery, they have identified different blocks within their vineyards, each characterized by unique soil types and micro-climates. The hand harvested grapes are fermented by their designated blocks. Throughout fermentation, winemaker Michael van Kierkerk notes the differences from batch to batch so he can blend the final wine accordingly. While some of the wines made at Audacia are blends of more than one varietal, this particular wine is 100% Cabernet Sauvignon. Upon opening the Audacia Cabernet Sauvignon, aromas of fresh mint and black currant rise from the glass along with a hint of vanilla. Even in their youth, the tannins are elegant and well balanced. The backbone of this wine is complemented by its rich fruit and mint flavors.
