Pascal Jolivet's father Jacques was a wine merchant in Pouilly sur Loire and passed this knowledge onto his son. In 1987, Pascal Jolivet, formerly an agent of the Champagne House Pommery, created his own house in Sancerre. This "artisan of taste," vinified his first vintage in 1991, moving beyond the traditional role of wine merchant. After numerous vineyard investments in Sancerre, AOP Pouilly-Fumé as well as in Tourraine, today the House of Pascal Jolivet consists of 65 hectares, with 42 in Sancerre and 8 in Pouilly-Fumé.
