Description
The estate
Founded by the Order of the Templars in the 13th century and then bequeathed to the Order of the Knights of Malta, Domaine Peyrassol has made its name over the vintages in the production of great Côtes de Provence wines.
In 2001, Philippe Austruy bought the estate and has continued its ancestral history. In 2002, this enthusiast undertook major work to restructure the vineyard and modernise the wine-making infrastructure, with a view to excel in the production of wines that reveal the quality of their terroir.
The vineyard
Cuvée des Commandeurs 2022 is a Côtes de Provence wine produced from vines planted on clay-limestone to schist soils depending on the plot.
The vintage
After a harsh winter, scattered with a few isolated storms, spring brought a wave of frost and hail which fortunately spared the estate's vineyards. The summer had more than three months of heat and relative drought.
The wine
2022 is the first certified Biological Agriculture vintage.
Winemaking and ageing
The grapes were delicately pneumatically pressed before the juice was separated. Vinification took place in stainless steel tanks at a controlled temperature, followed by ageing in stainless steel vats on fine lees, to conserve the aromatic freshness.

Tasting
Colour
The wine has a rose petal colour.
Nose
The nose gives off strawberry and raspberry scents which develop into more acidic notes of redcurrant and citrus enhanced by scents of sour sweets.
Palate
Light and tender, the palate delights with complex scents of red and exotic fruits.
Food and wine pairing
Cuvée des Commandeurs 2022 from Peyrassol pairs marvellously with salmon sushi, ceviche or white fish.
