The estate

Founded in 1896 by Marcel Ott, an Alsatian agricultural engineer, Domaines Ott has embodied the excellence of Provence wines for over a century. The estate comprises three prestigious properties: Château de Selle, acquired in 1912, Clos Mireille in 1936, and Château Romassan in 1956. Since 2004, Domaines Ott has been part of the Roederer Collection while retaining family management under the fourth generation, with Jean-François and Christian Ott. Recognized as the world reference for prestige rosé, Domaines Ott has been certified organic since the 2024 vintage.

The vineyard

The BY OTT 2025 is sourced 80% from the vineyards of Château de Selle and Clos Mireille, two estates classified as Cru Classé de Provence since 1955, located within the Côtes de Provence appellation. The vines benefit from diverse terroirs: limestone soils rich in stones at Château de Selle near Draguignan, and schist and quartz soils at Clos Mireille on the Mediterranean coast. This maritime proximity gives the grapes a distinctive mineral freshness. The vineyards are cultivated according to organic farming principles, with particular attention paid to respecting natural cycles and limiting yields.

The 2025 vintage represents the latest available harvest, crafted according to the rigorous methods that have made Domaines Ott's reputation.

Winemaking and aging

The BY OTT 2025 is produced in the contemporary cellar of Château de Selle, designed by architect Carl Fredrik Svenstedt. The grapes are hand-harvested and then carefully sorted on a sorting table. They undergo gentle whole-bunch pressing with a very short maceration to preserve the characteristic pale color. Slow fermentation takes place in temperature-controlled tanks to preserve the delicate aromas and freshness of the fruit. This meticulous winemaking process results in an elegant and refined rosé, true to the house's philosophy.
