Tasting
Color
The wine reveals an intense garnet hue, enhanced by delicate brick-red highlights that reflect its graceful evolution.
Nose
Complex and elegant, the bouquet opens with notes of ripe red fruit. It then evolves toward hints of cedar, harmoniously intertwined with aromas of sweet spices.
Palate
The attack is ample and velvety, supported by silky tannins and a pleasant freshness. The palate unfolds a powerful, well-structured frame, stretching into a remarkably long finish marked by delicious notes of black fruit and dark chocolate.
Food and wine pairings
This great French red wine pairs beautifully with grilled or roasted red meats, such as a pan-seared rib of beef. It will also enhance full-flavored poultry such as Nantes duck or roast squab, as well as hard cheeses.
Serving and aging
To fully appreciate Château Ormes de Pez 1994, serve it at a temperature between 14 and 16°C, after moderate decanting. This wine, built for aging, has now reached full maturity and is ready to drink.
The elegance and power of a red wine from Saint-Estèphe
The estate
Established in the mid-18th century in the Bordeaux region, Château Ormes de Pez takes its name from a former hamlet and a grove of elm trees that has since disappeared. Acquired on the eve of World War II, this historic estate still belongs to the Cazes family and is now headed by Jean-Charles Cazes. Renowned for its hospitality and environmental commitment, the estate combines tradition with modernity. It stands out for producing classic, consistent and harmonious Crus Bourgeois that faithfully reflect the identity of its terroir.
The vineyard
Located in the west of the commune of Saint-Estèphe, the vineyard covers 40 hectares. The vines, with an average age of around 21 years, thrive on gravelly rises of deep Garonne gravel mixed with sandy clay. Enjoying a temperate oceanic climate, the estate is farmed according to the principles of integrated agriculture and holds HVE 3 certification. The technical team relies on precision viticulture, including satellite imaging and massal selection, to preserve this exceptional terroir.
The vintage
1994 is recognized as a good vintage in the Bordeaux region. The weather conditions of this classic year allowed the grapes to reach satisfactory phenolic ripeness. This favorable climate particularly benefited the Left Bank appellations, yielding grapes with fine structure and ideal balance for crafting well-structured wines.
Vinification and aging
Following manual harvesting, the grapes destined for Château Ormes de Pez 1994 are placed plot by plot in temperature-controlled stainless steel vats. Fermentation and maceration last around twenty days, accompanied by rack-and-return and pumping over for a gentle extraction. The wine is then aged for 15 to 16 months in French oak barrels, 45% of which are new.
Grape varieties
The estate's vineyard is planted with Cabernet Sauvignon (47%), Merlot (39%), Cabernet Franc (10%) and Petit Verdot (4%).
