La propriété

Coralie de Boüard et son mari Loïc Maillet ont acquis le Château Clos de Boüard en 2016, situé dans l'appellation satellite Montagne Saint-Émilion.

Le vignoble

Le Château Clos de Boüard supervise un vignoble couvrant une superficie de 30 hectares. Âgées d'environ 40 ans, les vignes plantées sur des pentes argilo-calcaires orientées au sud donnent naissance à un grand vin de Montagne Saint-Émilion.

Vinification et vieillissement

Récolte manuelle avant sélection par tri optique. Macération pré-fermentaire à 8 -10 °C. Fermentation alcoolique. Macération pendant 3 à 5 semaines. Fermentation malolactique en fûts neufs. Vinification parcellaire, accompagnée de pigeages manuels. L'élevage dure 18 mois en fûts (30% en fûts neufs et 30% en fûts d'un vin).

Assemblage

Ce Château Clos de Boüard 2023 est le résultat d'un assemblage de merlot (85%), cabernet franc (10%) et cabernet sauvignon (5%).
