An elegant and complex sparkling rose from Raventos i Blanc

Since 1497, Raventos i Blanc remains faithful to tradition and upholds the relationship between man and nature at the very core of its production philosophy. The 90 hectare, family-owned estate is committed to using 100% biodynamic agricultural practices, allowing them to be sustainable and self-sufficient with a wide range of biodiversity and a rich underground life that gives them a structured and living soil. Their ultimate goal is for the soil to be very much alive and fertile. The geology of the estate is mostly calcareous with marine fossils which provides ideal conditions for producing wines with a generous mineral expression.

The Raventos i Blanc de Nit Brut Rosé 2016 is a blend of Xarel-lo, Macabeu, Parellada, and Monastrell, all of which are biodynamically farmed and certified. Tirage (addition of wine, yeast and sugar) and second fermentation are carried out following the traditional champenoise method. The wine then spends 18 months on the lees, allowing it to round out and express the saline and mineral characteristics of the region’s terroir. This brut rose is a great example of high quality sparkling wine and an incredible value.

The very pale sparkling rosé 2016 De Nit is a blend of Xarello, Macabeo, Parellada and around 5% Monastrell--so, it's not a bleeding of red grapes but a blend of white grapes with a bit of red to give it a little color. This is their signature rosé, with the soul of a white. It keeps all the character of the place and has a little bit of color, very little--it's extremely pale, and some could say it's a white. It has the dry, austere and direct palate of all of these wines, a dry and tasty palate. 2016 seems like a superb vintage for this bottling. This is adjusted to three grams of residual sugar. 180,000 bottles, some 4,500 magnums and 8,000 half-bottles were produced.
