Description
The estate
Owned by the Bernard family since 1983, the magnificent Domaine de Chevalier stands at the top of the greatest Bordeaux Classified Growths. The estate is situated in the heart of the Pessac-Leognan appellation, which is located in a green setting south of Bordeaux. L’Esprit de Chevalier is the second wine of the estate.
The vineyard
Domaine de Chevalier boasts a rare vineyard, comprising 50 hectares of red vines. The vineyard is planted in gravelly soil with clayey-gravelly subsoils. Since 1986, the young vines have been designed to ripen the berries that make part of the blend of the estate’s second wine, L’Esprit de Chevalier.
The vinification and aging
Following the manual harvest in crates, during which 3 to 5 meticulous sortings by maturity level were carried out, settling and then fermentation in barrels took place. Finally, the wine ages, one-third of it in new First Wine barrels for 10 months on its lees, with some stirring of the lees.
The blend
Sauvignon blanc (60%), semillon (40%).
