Description
Characteristics and Tasting Notes of Domaine de Chevalier 2023
Tasting
Color
The 2023 red displays a deep, dark hue, consistent with its Cabernet Sauvignon-dominant blend and the richly colored skins produced by the estate's high-density plantings.
Nose
The bouquet is complex and finely spiced, with notes of humus and forest floor enveloping the fruit. Black fruit aromas such as blackcurrant and blackberry mingle with touches of graphite, smoke, and subtle oak-derived nuances of cedar and toast.
Palate
The palate opens with an immediate, silky fullness, built on a concentrated yet elegant structure. The tannins are velvety and flavorful, while a vibrant interplay between ripe fruit and mineral freshness carries through to a long, pure, and precise finish.
Food and wine pairings
This wine pairs beautifully with red meats in rich sauces, roasted game, or dishes featuring mushrooms, echoing its savory depth and silky tannic structure. It also complements aged hard cheeses nicely.
Serving and cellaring
Domaine de Chevalier 2023 can be enjoyed in its youth, between 7 and 10 years, thanks to its silky, charming style, though it will truly shine with longer cellaring, between 12 and 20 years. For optimal enjoyment, decanting is recommended, with a serving temperature between 16 and 18°C.
Other characteristics
The wine reaches 13% alcohol by volume, a moderate level that reflects a careful balance between full ripeness and preserved freshness, in line with the estate's search for equilibrium in a warming climate.
A Pessac-Léognan red built on structure, freshness, and finesse
The Estate
Domaine de Chevalier, a Grand Cru Classé of Graves located in Léognan within the Pessac-Léognan appellation, was first named as such in 1852, inheriting a much older agricultural site known as Chivaley. Today owned and managed by the Bernard family, led by Olivier Bernard since 1983, the estate stands out for its single, forest-enclosed vineyard block, its double classification for both red and white wines, and its ongoing conversion to organic and biodynamic farming initiated across the whole property in 2021.
The Vineyard
The vines used for this red wine grow on 60 hectares within the Pessac-Léognan appellation, planted at a high density of 10,000 vines per hectare. The soils consist of gravel over a clay-gravel subsoil, offering good drainage while moderating vine vigor. The vineyard is entirely surrounded by forest, which creates a distinctive microclimate, contributes to biodiversity, and provides natural protection through beneficial fauna, all supporting the estate's organic and biodynamic conversion.
The Vintage
The 2023 growing season allowed for a staggered harvest, beginning on September 7 with fully ripe merlot grapes and concluding on September 30 with the last cabernet sauvignon. Yields were kept deliberately low, around 30 hl/ha, favoring concentration and quality in the fruit while preserving balanced acidity throughout the ripening cycle.
Winemaking and Aging
Grapes for Domaine de Chevalier 2023 were hand-harvested in small crates, with meticulous sorting in the vineyard followed by manual bunch sorting and optical berry sorting after destemming at the winery. Vinification took place across four types of vats—steel, stainless steel, concrete tulip-shaped vats, and wood—allowing precise plot-by-plot management for optimal extraction and blending. The wine was then aged in barrels for 16 to 18 months, with around one-third new oak, including lees stirring during the first four months to soften the tannic structure.
Grape Varieties
The blend is composed of 65% cabernet sauvignon, 25% merlot, 5% petit verdot, and 5% cabernet franc.
