Food and Wine Pairing
This Chardonnay pairs beautifully with fatty fish such as marinated salmon or seared tuna, whose texture matches the generosity of the wine while benefiting from its freshness. It also complements gently spiced, slow-cooked veal dishes, and can be enjoyed as an aperitif thanks to the richness of its bouquet.
A high-altitude Chardonnay shaped by the limestone of the Plateau de l'Aigle - Château des Tourettes
The estate
Château des Tourettes was taken over in 1997 by Maine and Jean-Marie Guffens-Heynen, Burgundian winemakers renowned for their mastery of Chardonnay. Perched in the hills above Apt, at the foot of the Luberon, the estate covers 19 hectares, 14 of which are planted with vines. Still run by the Guffens-Heynen couple, the property has established itself as a land of exploration for high-altitude white wines, free from appellation constraints and marketed as Vin de France.
The vineyard
The vines from which this Chardonnay originates are planted on the Plateau de l'Aigle, at an altitude of between 400 and 420 meters, on limestone soils. With an average age of 25 years, they come from massal selections and are harvested by hand. This high-altitude terroir allows the grape variety to retain freshness and tension, while expressing itself outside the framework of the local appellations, under the Vin de France designation.
Winemaking and aging
For the production of the Tinus Chardonnay Plateau de l'Aigle 2025, only the free-run juice from the first pressing is retained, in order to preserve the finesse and acidity of the grapes. Vinification takes place in concrete tanks, occasionally in tulip-shaped tanks, followed by aging on the lees, which lends the wine texture and complexity.
