The de Fargues 2007 delivers 13.9% alcohol and 134 grams of residual sugar. Picking commenced on September 11, with slow botrytis formation and recommenced October 2–24, the picking able to be conducted at a relatively leisurely pace. It has a very typical de Fargues nose that is initially mute, but it opens to reveal a slightly spirituous bouquet with clear honey, pressed flowers, almond, and a distant scent of the sea. The palate is medium-bodied with very fine tannins and outstanding delineation. It is utterly harmonious with a thrilling, edgy finish that expresses the terroir with great clarity. There is an effervescent quality that really takes the 2007 to another level, while the marmalade and white pepper finish is powerful and leaves a lasting impression. This is a fabulous 2007, one of the wines of the vintage. Tasted April 2013.

Very complex and heady on the nose. A step up from most. Even the glass feels heavy. This is a really good Sauternes in the traditional mould. Great stuff! Mass above subtlety perhaps but all the better for it! Great energy. Lots to get your teeth into. Still a bit astringent but there is so much energy here... Pear juice. (JR)

The 2007 Château de Fargues has a floral bouquet with clear honey, quince and saffron scents, initially timid yet blossoming with aeration. The palate is very well balanced, quite viscous and lightly spiced with decent acidity and hints of stem ginger towards the finish. Superb. Tasted at the 2007 horizontal in Sauternes.

Rich, lively and gushing with sweet, honey-coated tropical fruits, flowers, spice and vanilla custard, the wine is long, sweet, mouth-filling and fresh. If the wine fills out as it matures—and it just might—it should easily gain another point or two. This is a really nice style of Sauternes.

Nose
The bouquet reveals great aromatic complexity. It opens with notes of candied fruit, particularly dried apricot and quince paste, accompanied by acacia honey. Aromas of spring flowers and pineapple mingle with hints of citrus and exotic fruit. Extended barrel aging brings nuances of vanilla, beeswax and light wood. Spicy notes of cardamom, saffron and star anise complete this refined bouquet. With aeration, fragrances of broom, toasted bread and white pepper emerge, testifying to the finesse and purity of this vintage.

Palate
The palate is distinguished by its elegance and delicacy. The attack reveals a silky texture and taut concentration, characteristic of a chiseled vintage. The remarkable freshness preserved during maturation brings a vibrancy that perfectly balances the wine's richness. A Sauternes wine of exceptional elegance and finesse

The estate
Founded in 1306 by Raymond-Guilhem, nephew of Pope Clement V, Château de Fargues has belonged to the Lur Saluces family since 1472, embodying more than five centuries of exceptional heritage continuity. Located in the Sauternes appellation in Bordeaux, the estate extends over 170 hectares including 27 hectares of vines planted on clay-limestone and gravelly soils. Philippe de Lur Saluces currently manages this family property, perpetuating a philosophy of absolute excellence. The unique microclimate of the hill, alternating morning mists and sunny afternoons, favors the development of noble rot, the signature of great Sauternes.

The vineyard
The Château de Fargues vineyard extends over 14.37 hectares in the heart of the Sauternes appellation. The vines are planted on clay-limestone and gravelly soils that give the wines their unique character. The particular microclimate of this hill, with its morning mists followed by sunny afternoons, creates ideal conditions for the development of botrytis cinerea, the noble rot essential for producing great sweet wines of Sauternes.

The vintage
The 2007 vintage had a contrasting start with a very hot and sunny April, followed by a cool and gloomy period from May to June, accompanied by unprecedented mildew pressure in more than thirty years. Flowering stretched from late May to mid-June. Summer was temperate to cool with regular precipitation. The first bunches reached maturity at the end of August, preserving freshness and aromas. Early autumn saw an alternation of sun, heat and light rains that triggered the development of noble rot. An ideal autumn largely compensated for the lack of summer heat, giving birth to a vintage of elegance and refinement, chiseled and subtle, with delicate and taut concentration.

Vinification and aging
The harvest at Château de Fargues 2007 was carried out manually in six successive passes, allowing rigorous selection of the grapes. Fermentation took place in barrels for three to five weeks, with indigenous yeasts. Aging continued for 30 months, giving the wine its complexity and aromatic depth.
