Description
Characteristics and tasting notes of Chateau Couhins 2025 white
Tasting
Appearance
With a pale yellow hue, this wine reveals bright silvery reflections that herald a beautiful freshness.
Nose
The aromatic bouquet delicately unveils scents of spring flowers, citrus fruits such as grapefruit and pomelo, along with hints of lemon wax and white fruits.
Palate
Highly refined and remarkably precise, the palate offers a lively, perfectly balanced acidity. The whole is vibrant and fresh, stretching towards a long mineral finish of remarkable purity.
Food and wine pairings
This great white wine will be particularly enjoyed with seafood such as shellfish or fish in sauce. It also pairs wonderfully with fresh goat cheeses, or, more boldly, with a dark chocolate dessert.
The elegance of a great white from Pessac-Léognan
The estate
Located near Bordeaux, Château Couhins traces its origins back to the 18th century before taking its current form following the merger of two estates. Owned by INRAE since 1968, this 32-hectare vineyard is a true laboratory of ecological innovation, certified organic in 2022. Uniquely, this property was recognised as a Grand Cru Classé de Graves in 1959 exclusively for its white wines. Today led by Dominique Forget, the estate brilliantly combines environmental preservation with viticultural excellence.
The vineyard
In the heart of the Pessac-Léognan appellation, the 8 hectares dedicated to white grape varieties flourish on distinct terroirs. The vines benefit from a clay-sandy plateau that fosters slow ripening, as well as a north-facing clay-limestone hillside, particularly well suited to the freshness of whites. The estate promotes rich biodiversity through the planting of hedges, olive trees and saffron between the rows.
Vinification and ageing
The harvest began early on 19 August with a meticulous sorting of berries overexposed to the sun, and ended on 9 September on the north-facing slope. With a very low yield of 26 hl/ha, one of the lowest of the last twenty-five years, the small berries harvested display exceptional concentration and balance.
The process begins with a slow, gentle whole-cluster pressing, rigorously protected from oxidation. The juices are carefully selected as they flow out. Fermentation then takes place in 300- and 500-litre barrels. Finally, the wine is aged for 9 months in these same barrels, with bâtonnage on fine lees to give it all its complexity.
