Tasting

Appearance
This wine reveals a beautiful pale yellow hue, subtly illuminated by green highlights.

Nose
The aromatic bouquet opens with scents of tropical fruits, reminiscent of pineapple and white peach. It is enriched with floral touches of great freshness, all supported by a minerality very characteristic of its terroir.

Palate
The attack offers a superb balance between fine tension and a generous texture. The structure is both lively and rich, leading to a persistent and long finish, underlined by delicate mineral and smoky notes.

Food and wine pairings
This white wine pairs wonderfully with fresh oysters or grilled fish such as sea bass and turbot seasoned with herbs. It also enhances shellfish such as lobster or shrimp, as well as white meats in creamy sauce or a fresh goat cheese.

Serving and ageing
To fully appreciate this vintage, it is recommended to serve it well chilled, at a temperature between 10 and 12°C.

The refinement and balance of a Dry White Bordeaux

The estate
Founded in the 18th century and acquired in 1917 by the Cordier family, Château Talbot is a prestigious wine estate located in Saint-Julien-Beychevelle, on the left bank of Bordeaux. Today led by Nancy Bignon-Cordier, alongside Jean-Pierre Marty and Jean-Michel Laporte, this estate on the left bank of Bordeaux is renowned for its subtle, intense and well-balanced wines.

The vineyard
Dedicated to the production of one of the region's rare Dry White Bordeaux, this specific vineyard extends over 6.1 hectares. The vines, with an average age of 46 years, thrive on a terroir of Médoc gravel resting on a clay subsoil. Planted at a density of 7,700 vines per hectare, the vineyard is trained using the double Guyot Médoc pruning method, with grass cover between the rows to preserve the soils.

Vinification and ageing
The harvest of Caillou Blanc 2025 is carried out by hand, followed by a rigorous sorting directly in the vineyard during the late August picking. Vinification takes place entirely in barrels, of which 30% are new oak. Finally, the wine benefits from ageing on lees with regular bâtonnage over a period of 8 months. Alcohol: 13% vol.

88% Sauvignon Blanc and 12% Sémillon.
