was carried out manually. Vinification was done without destemming and with skin contact in casks and stainless steel tanks from 500 to 3,000 liters in capacity, depending on the volume of the batch. Fermentation takes 5 to 15 days, followed by 6-8 months of lees aging without stirring. The wine is aged for 1 month in the bottle before its release in September.
