Tasting
Color

The estate
The Triennes estate was founded in the late 1980s by three enthusiasts.
Two Burgundy winemakers, Jacques Seysses, of Domaine Dujac, and Aubert de Villaine, of the iconic Domaine de la Romanée-Conti, joined forces with a Parisian friend, Michel Macaux, and began searching for terroirs in the Var capable of producing great wines that fully express the richness of this wine region.
Their quest came to an end in late 1989 at an estate then known as “Le Logis de Nans”.
In honor of the Triennia, religious festivals celebrated every three years under the Roman Empire, and as an echo of this adventure driven by the three partners, the estate was renamed “Triennes”.
Drawing on their Burgundy experience, the three partners carried out significant work to renew and maintain the vineyard (replanting, top-grafting, massal selections) in order to produce pure, streamlined wines that reflect the quality of their terroir.
The vineyard
The vineyard of Saint Auguste 2018 enjoys a privileged location between the Monts Aurélien and Sainte Baume ranges, with a full south-facing exposure. The clay-limestone soils, reminiscent in places of great Burgundy and Bordeaux terroirs, bring complexity and structure to the wines. The altitude and orientation create a microclimate characterized by warm days and cool nights, preserving the grapes’ natural acidity and aromatic freshness. Deliberately limited yields of 30-35 hectoliters per hectare and certified organic farming practices guarantee optimal fruit quality. This wine is classified as IGP Méditerranée.
Vinification and aging
The grapes for Saint Auguste 2018 are hand-harvested and vinified by parcel in temperature-controlled stainless-steel tanks. Fermentation lasts from 12 to 25 days for standard lots, and up to 30-35 days for the most concentrated. The Syrah lots undergo daily punch-downs, while Cabernet Sauvignon benefits from daily pump-overs. Aging takes place over 12 months in French oak barrels previously used at Domaine Dujac. After a light fining, the wine is bottled without filtration in order to preserve all of its aromatic richness and texture.
