Situated in the Cabardes AOP appellation, just 5 kilometers from the Carcassonne castle in the Languedoc region of France, Chateau de Pennautier boasts 4 centuries of history. The chateau itself was built in 1620 by Bernard Reich de Pennautier, Treasurer of the States of Languedoc. Records from 1701 show that the wines of this estate were served on the tables of Versailles. From 1960, Alain de Lorgeril carried out a complete renovation of the estates vineyards before the estate was inherited in 1987 by Nicolas and Miren de Lorgeril of Maison Lorgeril. The latter represent the 10th generation of winegrowers since the creation of the estate. The Marquis de Pennautier Chardonnay Terroirs d'Altitude 2020 is classified under the IGP Pays d'Oc appellation.
The Marquis de Pennautier Chardonnay Terroirs d'Altitude 2020 comes from Chardonnay vines planted on north-facing slopes, which allows the fruit to retain its fresh acidity in the hot summer months. The “Terroirs d’Altitude” vineyards of the estate arrive to 360 meters of altitude, where cool temperatures slow down the ripening process. The vineyard is certified High Environmental Value Level 3.
Vinification and aging
The fruit is picked in the early hours of the day in order to maintain its freshness. The grapes are drained, immediately pressed and then urdergo cold settling. Fermentation takes place for a period of 3 weeks at temperatures between 16 and 18°C. The wine is fermented on lees in barrel with regular batonnage (lees stirring).
