Planted in 1984 by Al MacDonald, a pioneer of Oregon wine, the Seven Springs vineyard is today cared for by Evening Land Vineyards. From the south block of this beautiful vineyard comes the estate’s Seven Springs Chardonnay 2017, a single-variety white wine produced with whole cluster pressing and fermentation in once-used French barriques as well as Stockinger puncheons on 500 liters. After 12 months in barrel, this wine is racked to tank, where it ages for 6 more months before bottling.
The Seven Springs Chardonnay 2017 by Evening Land Vineyards is a wine of beautiful balance, revealing rich aromas of ripe pear, bruised yellow apples, warm brioche and citrus peal. On the palate, this Chardonnay is very smooth and generous. Its refreshing, mineral entry leads to a palate with layers of flavor. The finish is quite bright and vibrant, revealing a gorgeus acidity, which will allow this wine to pair nicely with a wide range of dishes, including a roast turkey or grilled autumn vegetables.
