Appearance

The wine displays an intense ruby red hue with garnet and purple highlights, reflecting the full ripeness of the grapes and the precision of the phenolic extraction.

Nose

The nose reveals a striking aromatic richness, carried by notes of sun-drenched black fruits such as blackberry, black cherry and plum. Aromas of red fruits — cherry and raspberry — further enrich this generous palette.

Palate

On the palate, the wine displays a generous body, ranging from medium to full, ample and fleshy. The attack is bold and opulent, driven by flavours of macerated black cherry, plum, blackberry jam and cherry. The tannins, silky and refined, integrate harmoniously thanks to a meticulous ageing process. The long and persistent finish offers a remarkable balance between fruit, oak, acidity and tannins.

Food and wine pairings

Domaine de Cambes pairs admirably with roasted or grilled red meats, particularly beef and lamb. It accompanies just as harmoniously slow-cooked dishes such as beef bourguignon, game in sauce (venison, duck, wild boar) or duck breast with cherries. Preparations featuring mushrooms, such as a truffle risotto, also offer a most successful pairing. For lovers of plant-based cuisine, this wine finds a flavourful echo with Mediterranean vegetables such as a ratatouille with herbes de Provence.

An exceptional Bordeaux wine crafted by the Mitjavile family

The estate

The Domaine de Cambes is the second wine of Château Roc de Cambes, an estate acquired in 1988 by François Mitjavile. A visionary figure and one of the most influential winegrowers of modern Bordeaux, François Mitjavile profoundly renewed the region's viticultural practices through his philosophy based on late harvests and minimal-intervention winemaking. Today, his daughter Nina Mitjavile is at the helm of Château Roc de Cambes and oversees the creation of Domaine de Cambes. The family also owns the prestigious Château Tertre Roteboeuf in Saint-Émilion as well as Domaine de l'Aurage in Castillon Côtes de Bordeaux. By deliberately refusing any official classification, the Mitjaviles place the authentic expression of the terroir and the excellence of their wines at the heart of their approach.

The vineyard

Domaine de Cambes comes primarily from plots established on the paluds, these alluvial plains located at the foot of the slopes of Château Roc de Cambes, to which are added parcel selections from the slopes themselves. These terroirs, with their alluvial and siliceous soils rich in organic matter, give this Bordeaux wine a supple character. The vineyard benefits from a privileged microclimate thanks to its proximity to the Gironde estuary, which regulates temperatures, protects the vines from winter frosts and brings welcome freshness in summer. The vines, with an average age of forty to fifty years, are cultivated according to a sustainable approach, with permanent grass cover and short pruning in Cordon de Royat. This rigorous viticultural management naturally limits yields and promotes the concentration of the berries.

Winemaking and ageing

The winemaking process follows the philosophy of minimal intervention that is the credo of the Mitjavile family. After a meticulous selection of hand-harvested grapes, fermentation takes place in concrete vats with indigenous yeasts, without strict temperature regulation, encouraging a slow and delicate extraction of tannins and aromas. The wine is then aged for eighteen months in new French oak barrels, sourced exclusively from the Radoux cooperage. Regular rackings throughout this period ensure a gradual oxygenation, conducive to aromatic complexity and the harmonious integration of the oak. This patient and respectful approach allows Domaine de Cambes 2021 to fully express its character, while perpetuating the inimitable signature of the Mitjavile family.
