Chateau Vieux Maillet reigns over an 8.65-hectare vineyard, planted in gravelly and sandy soils with clayey mollusc soils typical of Pomerol.
Vinification and aging
Following the harvest, the grapes were subjected to a double selective sorting (manual and densimetric). Alcoholic fermentation was carried out in thermo-regulated vats and barrels. 10 to 15 days post-fermentation maceration. Total vatting of about a month. Aging lasted about 14 months in barrels (40% new barrels) and in amphorae.
