. A traditional Bordeaux winemaking style is employed at Chateau Peyfaures. Following the hand-picking of the grapes, they are crushed in a basket press. They then go through spontaneous fermentation with naturally occurring yeasts. The minimal intervention, parcel-by-parcel winemaking provides a way for the terroir to truly shine. is made from a blend of 95% Merlot, 3% Cabernet Franc and 2% Cabernet Sauvignon. The wine is aged in stainless steel vats
with roughly on third of the blend maturing in French oak barrels
for a period of 12 months.
