This exceptional climate combined with the viticultural strategies of Chateau de La Dauphine to ensure excellent health. The light precipitation in September allowed the fruit to ripen and produce a significant volume of juice, just in time for the very tranquil, healthy harvest.
Manual harvest from September 23 to October 3. Rigorous plot selection. Gravity reception. Double sorting. Temperature-controlled fermentation at 28 ° C. Fermentation for 30 days. Extraction by manual pour-overs. Vertical pressing. Malolactic fermentation in barrels (30%).
