Description
Characteristics and Tasting Tips for Folio Natura by Delamain
Tasting
Nose
The nose opens with white flowers and vine blossom, the signature of Folle Blanche. Juicy white fruits follow: vineyard peach, pear and crisp grape, contributed by Colombard. Citrus notes of bergamot and lemon zest complete the whole.
Palate
The attack is fresh and precise, marked by verbena and linden. The body, structured by Ugni Blanc, reveals notes of pear, ginger and marzipan. The finish is long and persistent.
Pairings and tasting occasions
This cognac is best enjoyed neat to appreciate its richness and fruity character. It is designed for simple, relaxed moments of sharing. Whisky Magazine France suggests pairing it with duck rillettes, a plate of foie gras garnished with fresh apricots, or Noir de Bigorre ham. For dessert, it pairs well with a pear and almond tart.
Mixology
Its structure and freshness make it ideal for elegant, contemporary creations. It is particularly suited to highballs, lengthened and served over ice, as well as to the cognac sour.
Other characteristics
Folio Natura is a fruity, harmonious style of cognac that combines floral finesse, fruity freshness and balanced structure. It is aged for six years or more, carries no vintage and is bottled at 40% ABV.
A fruity, floral and vibrant Cognac Grande Champagne by Delamain
Delamain, a Cognac Grande Champagne house in Jarnac
Officially founded in 1824 in Jarnac, on the banks of the Charente, the House of Delamain draws its commercial roots from James Delamain's settling in Jarnac in 1759 and his partnership with Jean-Isaac Ranson. Nine generations of the family have nurtured a singular naturalist tradition, devoted to observing the living world. Delamain produces exclusively Cognac Grande Champagne, the appellation's premier cru. Its cellars, located along the river, are described by the house as a "second terroir". Nature, Time and People form the three pillars of its identity. Since 2017, the house has been majority-owned by the Société Jacques Bollinger. It nevertheless retains its family character: Charles Braastad, a descendant of James Delamain, has been its cellar master since 2024. Éric Le Bouar serves as managing director.
Folio Natura, a modern cognac made from three grape varieties
This cognac combines three complementary grape varieties. Ugni Blanc, the main grape variety of the appellation, gives structure to the blend. Folle Blanche brings freshness and finesse. Colombard adds indulgence and fruitiness.
The eaux-de-vie come mainly from La Rambaudie, a 21-hectare vineyard in a single block, operated by Delamain since 2019. It extends across three valleys with limestone soils, in Grande Champagne. Double distillation is carried out on fine lees in a copper Charentais still, which gives a full texture on the palate. Aging takes place in old 350-liter French oak casks, which limit the contribution of tannins and preserve the expression of the fruit and the terroir.
"Folio Natura" pays tribute to the "Livres de Nature", the first popular naturalist book series, created by Jacques Delamain at Éditions Stock. The packaging of this spirit, with its distinctive design, evokes the passions of several generations: the orchid for Jean, the blue tit for Jacques, the fossil for Philippe and insects for Henry.
