Description
A Complex White Burgundy with a Cool Minerality
Vincent Dauvissat is one of the most prestigious winemakers in the Chablis appellation of Burgundy. With the help of his father, Dauvissat manages nearly 23 acres of vineyards in top areas, including the Premier Crus of Vaillons, Sechets and Forest and the Grand Crus of Preuses and Clos. The vines are planted on hillsides of Jurassic limestone, perfect the cultivation of Chardonnay. The yields are typically limited to 50 hectoliters per hectare. Dauvissat practices traditional winemaking with at least one year of maturation in oak, a portion of which is new in each vintage. The result is a portfolio of wines that are extremely complex and built for aging in bottle. The Chablis 1er Cru La Forest 2015 by Vincent Dauvissat is made with 100% Chardonnay grapes grown on the 9.4-acre Premier Cru holding La Forest (or Foret), the estate's largest parcel. The vines, 40 years old on average, are planted in Kimmeridgean soils typical of the Chablis region's very best terroirs. The wines are matured in Nevers oak with less than 10 percent new barrels.The Chablis 1er Cru La Forest 2015 by Vincent Dauvissat reveals a gorgeous body and deep yellow color in the glass. The nose, consistent with the palate, releases seductive aromas of chamomile and fennel seed, along with blanched almonds, star fruit and subtle hints of green tea. On the mid-palate, a stony white minerality becomes apparent, adding a certain cool tension to this wine. A fantastic white Burgundy with an aging potential of at least 10 years.
