Description
The Clau de Nell Cabernet Franc is harvested from vines averaging 40 years old, only five hectares of vines are dedicated to producing this cuvee. With soils comprising of silty-clay mix, of grit and red flint on tufa, the grapes are handpicked into small crates, as to not crush the grapes, and hand destemmed at harvest. The grapes are gently pressed to release only the finest juice for fermentation following ageing for 18 months on its fine lees in old Burgundy casks, slowly maturing in the estate’s troglodyte cellars. Completely biodynamic and bottled unfined and unfiltered, the Clau de Nell Cabernet Franc displays a lovely perfume of red berries, light black currant and dusty tannins.
