Paolo Scavino : Barolo 2011

Paolo Scavino is one of the most well respected Barolo producers in Castiglione Falletto. They produce three single cru Barolo. (Cannubi, Rocche dell'Annunziata Riserva and Bricco Ambrogio are their single vineyard Barolos). The Paolo Scavino Barolo is sourced from the best plots of seven Barolo crus. The diversity of the soils and climate characterizes each of these unique terroirs, unified in this blend offering harmony and complexity. Separate vinification in stainless steel vats is followed by separate aging in neutral French oak barrels for 10 months. The wine then spends a further 12 months in large casks to complete final maturation. The final blend is composed of the best performing plots of the vintage, aged one year in stainless steel and 10 months in bottle before release. The Paolo Scavino Barolo has sweet cherry, strawberry and spice flavors. A full bodied Barolo with pure fruit and berry character, enjoy with red sauces and mature cheeses.
