Familia Schroeder's Sauras Pinot Noir gets its name from the dinosaur fossils found throughout the vineyards of the estate. The winery even has a cellar dedicated to housing several of these fossils for visitors to gaze upon. This Pinot Noir undergoes barrel fermentation prior to aging for 6 months in a combination of 30% French oak and 70% American oak. The result is a wine with a brilliant red tone showing notes of spice along with vanilla and coco. The bright cherry fruit balances out the more subtle flavors brought upon by the oak.
