Bois de Boursan is a fine, traditional example of Chateauneuf. Their vineyards are spread across many soil types and exposures, adding to the complexity of their wine. Indigenous yeasts, whole cluster fermentation and pressing in an old basket press bring out the best in their fruit. Aging is for around two years in large oak, and the wines are bottled unfined and unfiltered. The 2007 is ripe, rich and a touch inky with a warm, long taste refreshed by finely integrated acidity at the end.
