The Bourgogne Hautes-Cotes de Nuits "Louis Auguste" 2015 by David Duband is a wine made with Pinot Noir grown on 50-year-old vines, which are planted in soils of limestone and marl. They enjoy a southern exposure. The fruit is harvested manually. Around 40% of the fruit is vinified in whole clusters. After 17 days of maceration, the wines are punched down 5-7 times and are pumped over. After it is pressed, the wine is set aside and clarified for a period of 2 weeks, and is then transported into oak barrels (30% new, the rest 1, 2 or 3 years old). The wine then spends 14 months in the barrel and is racked into a tank. It remains there for 3 month before bottling, without being fined or filtered.
At tasting, the David Duband Bourgogne Hautes-Cotes de Nuits "Louis Auguste" 2015 reveals a ruby red color and beautiful dark reflections. The nose offers intense aromas of red and black fruit, neat and elegant. The wine is quite frank in the mouth, evolving on the palate touches of licorice and a slightly spicy finish. A wonderful potential for guard.
