Description
The Cucao PX (Pedro Ximenez) comes from the Elqui Valley of Chile. The Elqui Valley is the northern most wine growing region in all of Chile, and well known for having the clearest skies in the world. The grape Pedro Ximenez is more commonly associated with Spain and the production of Sherry (Jerez). In addition to its Spanish roots, Pedro Ximenez was also one of oldest grape varieties in Chile, and was first introduced and developed in northern Chile for the production of Pisco, a local liquor. The Cucao Pedro Ximenez delivers a unique combination of both freshness and fruitiness along with a very well balanced acidity. Undergoing fermentation in stainless steel helps to preserve the flavors and aromas that are naturally inherent in the Pedro Ximenez grape.
