Description
The name for the Baron Di Pauli Enosi, a blend of Pinot Blanc (Weissburgunder), Riesling, and Sauvignon Blanc, comes from the Greek for bringing together or union. The Riesling and Pinot Blanc are fermented and aged entirely in stainless steel, while the Sauvignon Blanc is done in a combination of steel and barrel. After six months of aging on the lees, the blend is assembled and bottled. Aromatically the Baron di Pauli Enosi shows peach and floral tones, while on the palate citrus elements emerge. It matches well with both more conventional pairings such as seafood, particularly shellfish, and also with more difficult fare such as asparagus.
